How do I reset the UI back to it’s default?

Go to C:\Users\your admin\AppData\Roaming\Blender Foundation\Blender\2.78\config… and delet userpref

If you need to completely reset it you could delete your user preferences. You might want to make a backup of it before. If you are on Windows it will be in %appdata%\Blender Foundation\Blender. You can copy paste that into windows explorer, or go to C:\Users\ [YOUR WINDOWS USER NAME] \AppData\Roaming\Blender Foundation\Blender. The folder named after the version will be user preferences for that version. It contains all installed plugins as well and themes and keyboard shortcuts - everything.

File / Load Factory Settings
File / Save Startup File
