Knee pole not realistic? (Not the common knee pole problem)

I have set up IK legs with knee poles just as everyone do and it works fine.

But when animating my character the knees seem to follow the foot too correctly and I have to manually animate the pole targets to get a more realistic motion. Of course I am not talking about the usual walk cycles, but more mocap related stuff like dancing and standing around.

Observation:
When I sit at my computer with knees bent, I can in fact twist my ankles to point my feet outwards and inwards WITHOUT my knees following wildly as they would do with knee poles in 3d.

How can I set up the thigh and shin bones to be “softer” and more realistic in the knee rotation?

An idea could be to set up dummy bones with all sorts of contraints, but is there maybe a simpler “hidden button”?
