Ok I decided to start again, and I’m a lot happier with this. A lot simpler, and my first project using Eevee - 2.8 is still a bit of a pain at the moment, but I found a setting to change the controls to old Blender which helped with that [Preferences > Input > Blender to Blender 27x (above Preferences)].

Render time 7 seconds!! (the mountain and moon (modified) are from Unsplash). Everything else, including the sky and even half the texture painting, were done in Blender.
