So far as I know, when you make a face with Blender, it automatically makes the face pointing towards you. But when I have it display the normals, they all point away from me. I’m puzzled. I realize that I can flip them, but I’d rather understand what I can do to make it correct to begin with.

You can’t avoid normals pointing in the wrong direction sometimes. Just select everything and press ‘Ctrl + N’ to recalculate.
For example, try creating a circle and then just extrude it to make a tube. You will see that some normals point the wrong way.
As I understand it, the normals of a face are defined by the order the vertices are selected to make up the face.
