is it possible to align some vertices in relation to other vertices/edges?

A broad question, depending on what you want to do the answer is probably yes with the snap tools.

Vertices can be aligned quickly in X, Y, or Z plane by scaling all of them at once to zero. That will flatten all the 3D geometry.
