Strangely, the shortcut for “Create Faces” in my Blender 2.56a is Alt-F and not Shift-F.
Shift-F puts me in a slow camera panning mode. Can anyone explain?

Yes in Blender 2.5 that is what they keyboard shortcuts are.
F = Face/Edge of 2 selected parts
Alt+F = Will Fill a region.
Shift+Alt+F = Does region fill but tries to make it all neat.
Shift+F = Camera Fly Mode.
If you don’t like the key shortcuts you can always change them in the User Prerences window
I have been following a tutorial and assumed it was correct. I’ll inform the author.
