I want to crate a movie with blender 3d, and i was wondering when creating a movie how does it work, have multiple files? like when in day have a file for evening? when a one place have a file for another??
That is one way to do it. Another way is to use scenes. There are quite a few options regarding scenes, so be sure to check the documentation at the blender wiki.

That depends on your movie itself.
I think if you buy the Sintel DVDs, you’ll have a pretty good idea about how professionals organize their files (I remember Colin explained many things about the technologies they used in YouTube videos 
)
As for me, most of my short animations are kept in a single .blend file… I just use many layers :).
