Baking a stylized skin texture?

Hello my fellow Blender users
It crossed my mind today that maybe Blender could help generate stylized skin textures for characters and I am a bit stumped. I am looking to generate something similar to this style:

Now I know that these textures weren’t automatically generated, but I am looking to do something similar in cycles that I can then bake to a diffuse map. I’ll admit, when it comes to Blender materials is the thing I am most weak at so please bear with me if this is a silly question. Any help or advice would be greatly appreciated!

Do you really need baking? In this kind of textures, simply painting them is normally enough.

Baking is bit more for:
-Convert complex nodes setups into textures
-Capture details (textures, normals, displacements, etc) from high resolution objects to low resolution
-Store light information in the textures (direct, indirect, ambient occlusion)
-Store object information in textures (coordinates, curvatures, etc)
