Baking textures/materials for a digital stunt-double in a Shortfilm

Hey blender-artists,
we are a group of 40-50 people that are working on a Shortfilm and a company created a digital-stuntdouble that we can use for some VFX-based stunt scenes.
The problem is that the materials that were send with that model are quiet complex and we need to export it as an FBX (with included textures/material), which means that we need to bake the textures. But were not able to bake these material to the standard textures like Color, Metallic, Roughness, Normal, etc. until now …
