Best way to create the "world" for a flying animation?

hey there,
if been working on some plane models and want to turn it into a cool animtion, with flying sequenzes (obviously).
but now i am wondering wich is the best way to set up the “world” where the animation will take place. if you use an hdri, it may wont look realisc (especially when flying over land), if you model and texture all the surface you will be taking forever i guess. the clouds are a topic on its own again… use planes with textures, or go for volume rendering?

maybe someone knows a little trick or hint in creating a realistic surrounding for an animation in mid-air at high speed. or a link to some behind the sceens from a dogfight/flight sceene from a movie.
