I want to hide some of the faces on the outside of my dogs mouth so I can paint, on the 3D model, on the part of the lips that go inside the mouth.

You can press ‘H’ to hide selected faces in Edit Mode, then switch to Texture Paint Mode.
You can hide/unhide faces in Edit Mode and then switch to Paint.
OR
Make a copy of your object and just separate it (since would use the same material/textures). Just don’t break the original copy by accident.
Thanks! Always.
One other very useful method is the Mask Modifier - assign a vertex group or a few of them, and then you can specify the group as hidden or invert the effect to get the remainder.
Thanks Craig_Jones, I am just getting into all the uses for vertex groups.
