I was always conntent with using white text in bge until now. You cant see the letters against the back ground that I have!
The simple question here is, can I have a different colored text?
What sort of text are you using? Is it the uv-mapped-to-a-plane text that’s controlled by a property, or is it something else?

You can vertex paint your text object. So you do not need a separate font texture.
