At around 0:20 - He clicks the edit box on the displace modifier settings at the right of the screen.
When I click this, nothing happens.
What am I doing wrong?

Hi,
It works fine on my end (Blender 4.4.3):
Try to reset your Blender settings to factory ones by going to File → Defaults → Load Factory Settings, as shown in the screenshot right down below:
And repeat your steps once again.
