It’s really up to you what you want to learn. Other people cannot answer this for you. Maybe practice a bit, try to think of something that you would like to model or make, try it, see what knowledge you lack and what you are interested to learn. There are many areas of Blender to learn: modelling, sculpting, drawing with Grease Pencil, simulations, Geometry Nodes, rigging, animation, video editing, motion tracking, materials, lighting, rendering, compositing, Python scripting… It really depends on you and what you want.
You might want to take a look at the CGBoost Tutorial series…
Even though it is for 2.8 you could still follow along…
Thanks for taking the time to answer. You make a good point… any trainers who have a similar style to Ryan or Andrew ? I get on ok with the pace and level…
Thank you, appreciated
I don’t know if the link will help.

For beginners, a video of a certain learning process is helpful, but if you have already seen another lecture, your concentration may be low and you may not be good.
If it’s easier than the previous lecture, you don’t focus on the content and ignore it.
You can choose from here: https://www.youtube.com/@polygonrunway/videos
I used them alot as beginner.
