Is there a way to undo or erase vertex paint?

erase? you mean set it all to one color?
yeah, paint over it
you can select all the faces in face select mode, choose a color of your liking (you may need to be in vertex paint mode simultaneously to do that) and press the set vert col button in the paint (now edit) buttons
i think if you choose ‘set’, it sets the whole thing to the current color, and if you really want to delete it, in edit buttons press ‘vert color delete’
