when I export a .png as a template for Photoshop, some uv-mapped areas show up as pink/orange, not grey. Anyone know why (and how to solve this if it’s a problem)?

I think you assigned these colours to several parts of your mesh with materials.
When you export UVs of a mesh with different materials, the image contains colours of these materials so that you can see which part of the image corresponds to which material.
If you don’t want the colour set the Fill Opacity to zero when you export the UV layout
