A well known problem that almost allways occurs in any kind of limb rig. There are several solutions for it but non of them work really well in blender. There are muscle support systems and there are solutions based on cloth simulation and delta mush but blender doesnt supports none of it. The simplest way for knees and elbows would be a corrective shape.
