I have an initial idea for the process (actually, two methods) and I hope it turns out well.
This method perfectly mimics reality.
The pencil is modeled as three meshes within a single object: outer paint, wood, and graphite. two paintbrush rollers apply Dynamic Paint (Displace), and a shape key nudges the wood forward just enough to hide the paint behind it after baking. There are also two displacement areas to make the edges slightly irregular.
Complex? Yes. Boring? No. Ignored? Maybe… but you might need it later!
The second method – a simple trick
The pencil passes through a cone (Boolean-Difference) placed between the two helical blades.
Coming out of its “torture chamber,” the pencil carries the cone by order of Mr. Constraint.
Simple and smooth? Ya.

There are countless free sound effects available online.
As for this specific case, I converted a pencil sharpener video to mp3, selected the desired time range, and added fade-in/out effects.
