As you can see the nodes displayed are not image background texture. So how do I access the automated texture to put an hdri image I choose or simply change the background color.

Add an Environment Texture, plug it into the Color input of the Background node. Add your HDRI to the Environment Texture
I tried but all the add node functions are greyed out and don’t do anything.
It seems that you wanna change what appears in the Material preview mode. What Joseph suggested works for the final render
You can change it between some pre-installed HDRI’s that come with Blender by clicking on the sphere first
It’s possible put your own HDRI’s there too but that’s for another topic

Just notice that this preview won’t appear in the final render
Change the mode to Rendered and then you will see the nodes affecting the actual background
