So I connected everything on my model and i dont know how to colour / change material on different parts

First you have to know that the youe opened area in panel Object → Viewport Display → Color is only for the Viewport Shading: Solid and the “real” material is in → Surface.
Next you may have a look via Help → Manual into Docs-Blender Manual: Render → Materials…
