how do i flat a mesh?

how do i flat it, and if there are other method to twisted it or change its shape please tell me :-?

In edit mode, select all vertex and change the size with s Key on the z direction (hit z).

You may change the shape for instance usinge ctrl+shift+s and than use mouse, same with shift+p, warp tool is nice too, use shift+w, always in edit mode.
