How do I make it look like there is steel cable wrapped around this pole?

I’d probably start with the helix preset from the Add Curve: Extra Objects addon.

Or it might be the Curve Spiral: Archemedian.

That’s the one I’d use. Helix only does one turn, and to get more out of it one has to jump through a bunch of hoops which isn’t worth it unless one explicitly needs a helix, like for modeling DNA.

And then shrinkwrap the spiral curve so it sticks to the pole.
