how do i triangulate a model/mesh?

In edit mode, select all faces you need to triangulate, and then press CTRL-T. To “un” triangulate them, you can press ALT-J.

I wish I had know that Alt-J thing about three weeks ago. It would have saved me a lot of time trying to get all quads out of a mesh. Oh well.
