Can anyone tell me how to etch text into stone so it looks like it is carved into the stone?

I confess to being a total newbie, so don’t trust me too much, but:
I would use Bezier curves and Blender text.
For example:
- Delete the default cube
- Add a Bezier circle
- Tab into edit mode, select all, and hit V (for vector, I believe)
- Rotate your square (created from step 3) 45 degrees around the Z axis
- Return to object mode
- Add some text and align it so it’s directly over the Bezier circle/square and at the same height (the text is basically “inside” the 2d Bezier circle)
- Convert the text to a curve with alt+c
- Join the text to the Bezier circle with control+j
- Your text should now be “cut out” of the Bezier circle
- You can extrude the Bezier circle from the Curve and Surface tab (in edit mode)
This should give you the basic cutout. You can use another curve object or just a plane to “limit” the depth at which the text is etched. To make it look worn and realistic, textures are probably a good bet.
Alternatively, you can simply use a heavily subdivided block and a displacement map.
Tarrosion
If you do not actually need to add geometry, you can use a simple grey scale bump map for the text. You simply load an image like the one below as an image texture, increase the filter some to smooth out the edges (I used filter of 3) and then apply it to Nor in the Map Input panel.

i got something that i did not see begore
i tried the Bump method and when i added text i set the 3D on but when i extruded it
the middle of the letters where empty ?
is there another variable to filled up the middle of the letters?
i can transform it into mesh and then extrude no problemo
but i tough that the letters where supposed to be filled uio an not 1/2 empty !

@Ricky, The Bumpmap is just an image. I Created the word stone as flat text, rendered it as shadeless black on a grey background and then loaded that rendered image as an image texture on the stone. Using the bumpmap to control the Nor value in the Map Input. There is no need to extrude the text for a bump map.

as my normal and bump map don’t seems to work i used the only one remaining
displacement modifier - at least this one is working!

What worked great? Did you use the actual Text geometry, a Bump-map, or a Displacement map?

I see your system worked as well, but I only tried the curve system, think I need the extra geometry so I can pan around the scene and have dynamic shadows in the text.
But I will see if your way works for what I need as well.
It was a very handy tip non the less, thanks for all your help you give folks here, I see you answer most of the questions, you are like a jedi blenderer.
I figured you had gone with one of the geometry ideas. Indeed, that will give you better results if you are focused on the stone and are moving the view around. The Bump mapping effect would diminish depending on the camera angle.
BTW: I am no Jedi, I just have a good memory and a lot of time to read the forums. I would love to see the final results when you are done.

I have a big project I am working on, it seems like any project is a big one when you are talking 3D animation, you ever notice that?
i trid with the curve and when i did the text in 3D the middle of the letters became empty
how iid you do it i mean to have full faces letters

I think you need to convert the text to a Mesh to have faces
if you follow the instructions given you have to make the text and then joint with the bezier circle
so when do you make it 3D after the joint or before?
i trid to follow it and i was not able to do it sorry!
