Sometimes there is a transparent extra geometry in human eye models which do show in white when just seeing in simple material view…
…so when/where are they white ??

Are you using EEVEE to render? If yes, have you turned on transparency for the material?
Change the Opaque in this image to Alpha Blend…
This only need to be done on the outer layer of the eye.
Show a screenshot of the material of the outer layer of the eye. It may be called the Cornea.
Your screen shot seems to show you are in edit mode on the face mesh. You need to be in edit mode on the eye.
This is the only material there is for the eye
So what is that white layer doing in the UV layout? Is it showing as overlaying that image.
It would be easiest to fix if you shared the file. You may want to save the whole eye & textures into a file and share only that. There is a 5MB limit here so you may have to share it with Google Drive, Dropbox or some other sharing site.
To save the textures into the file you can click the shield icon to the right of the image name (like in your last comment). And then resave the file again to make sure the image gets saved. Or you can use File Menu > External Data > Pack resources.
