Do you mean multiple materials on a single object or multiple textures as part of a single material ?
Look at blendercookie for many texturing tutorials including one to add multiple materials to a single object.

You can use multiple textures in MultiTexture or GLSL mode. If you’re using GLSL mode, then you can have things like partially transparent textures overlapping and such, which isn’t possible with MultiTexture mode. You can add new textures to the texture slots of a material, and select which UV-map you want those textures to use in the “Map To” dialog of the texture, if I recall.
