how to use a different matirial for each part of the model and i need a good tutorial

I asked a question about my model (seperating it into different meshes that can still connect together) and i got my perfect answers here:

next, I want to know if it’s possible to assigne a different matirial to each part (in that case its a human, so different texture for pants, different for shirt (body) and face etc…) and how??

and nother thing, i saw a nice tutorial about keyframing of graybeard… but I was no help because it was actually scene keyframing.
Im looking for a good tutorial that will show me how to create bones for my model and animate it (keyframes of mesh animation)
if such thing exist i’d be happy to get a link for the vid, or text
