If you wan to model something more realistic than only using cubes (except if participating in the 10 cubes challenge) then you have to model it. That’s also the reason why so much modellers are needed. Especialy when modelling something in mind like textureing or even animation. Additionally this depends on the area: games need different solution than VFX or architectural visualizations.
Your questions are often very general and so the answers can be only this: general.
( I do not even understand what parametric should mean in this context. )
If you have an example, we can help you better. But the simplest solution to add detail to a scene is to use the displace modifier.
Hi, you don’t always have to only relay on deforming an objects to make it look less perfect, You can also do it by combining textures.
As @Dworkin already mentioned displacing the sharp edges- outlines (use bevel on them beforehand to get rid of the sharpness), maybe plus other edges of your choise is a good start.

Generally, I add noise to my objects using geonodes. It has to be very subtle.
