To me it looks like layer weight passed into color ramp with diff hues, then fed into glossy or metallic principled shader. I’ve used a similar trick for bubbles before.

I modelled a similar, yet not so impressive fly last year, here is my node setup:
For a complete rainbow you can just plug layer weight into a hue, it’s good for bubbles:
