Just wondering if there is a way to increase the size of the UI icons, they are so so tiny and my old eyes strain to see what I need to see.

I did see that but that will scale everything up so does that mean EVERYTHING? Not sure if that’s exactly what I want but I’ll try that out.
Also when I save out my blen file will that save out how I have the UI set up? I have a started a paint project that I’ve been apprehensive to dive into but split the screen, have the node set up and have the Viewport shading set to ON so I can see what’s happening. I’d hate to have all this extra time spent setting it all up to have it all go poof when I start up the project next time…

There are dozen (and dozen) of settings in Blender Preferences →Themes…
Also you can save the preferences (bottom left in prefs…) and also your startup file (File → Defaults → Save Startup File )

Yeah, this is probably the best way. If it’s making the text too big, you can separately change the text rendering size from the preferences- this should allow for bigger icons but most everything else the same
You can upscale the overall resolution, and in the properties window and side panels you can Ctrl-MMB-Drag up or down to resize their scale. It means less vertical space, but more horizontal space.
Other helpful things are the Line Width under the Resolution Scale, and Vertex size in the Theme > 3D Viewport settings.
I made my own theme for all theme tweaks. There are also lots of adjustments saved into my Default file (File > Defaults > Save Startup File).
Preferences > Load / Save has a Load UI option. If it is ticked your file looks just like when you last used it. The same option is available in the side panel of the Open File Browser window (click the cog at top right, or press n, to open the side panel).
You can also make your own workspace like the Layout , Shading and others along the top of the Blender window.
