Making ruins

Hello fellows,
I am here to ask for your wisdom. I need to make a medieval castle ruins, and struggle searching for an optimal workflow. Can you advice me what techniques can I use to make such thing as a mid poly ruins? I can’t go for sculpt, as it will require to have very dense mesh.
So now I am basically making a low poly model, slicing it with knife tool, and then add some details. But maybe there are some plugins or other tools, which can help to destroy my model in a simpler way? I would be grateful for any ideas.
