Memory usage vastly different in Status bar than in Task manager

So I’m working on this file which has really weird RAM consumption. The file itself is running really smoothly (with some exceptions that I’ll explain later), but Blender tells me it’s only using 850mb of RAM, while my PC sees it as 14Gb!

The file’s status bar:

My task manager:
Capture d'écran 2024-08-27 182433

Here’s for the weird stuff:

-I did purge the file of all unused files, and it’s not packed.
-My Un-do is set to 256, which never caused me any issues before.
-Copying and pasting any object makes Blender freeze for ten seconds, as well as switching the render visibility of individual objects, but nothing else does that in the file, even my Cycle preview is almost real time.

And THEN this morning, without doing anything specific, the RAM consumption gradually dropped to 900mb for no reason over the the course of 30 minutes! I re-opened the file since and now it’s back at 14Gb of RAM, and it’s not dropping this time.

I do have to copy and paste some (pretty simple) meshes for design iteration, and the fact it’s freezing each time is really slowing my work pace.

I don’t understand what’s going on, I’d appreciate any help on my case if someone knows about this…

Edit:
Since making this topic I’ve been adding more meshes and that’s the RAM now:

And again, same file an hour later:
Capture d'écran 2024-08-27 214536

I’m speechless

It’s still lagging when I copy-paste and turn on/off render visibility though.

Turns out I had several arrays of hundreds of meshes using Solidify and Subsurf which I forgot about. I got rid of them and everything went back to normal including the Outliner lag.
My solution:

If you don’t want to delete heavy collection, unticking them does indeed free your RAM and make Blender work much smoother.
