Modeling a simple, mostly flat pouch?

I’m having trouble modeling something that seems like it should be very simple. Every time I try to model it, the edges come out too sharp or just looks generally shitty.

What’s the easiest method of doing this?

You do have smooth shading turned on in Tool Shelves right?

There are several modifiers you can use to controlled how edge gets shaded. They are Bevel, and Edge split modifiers. Play with it.
