Modelling artisan cheese

Hi all,
I’m quite new blender user and I want to model this kind of artisan cheese, as shown on photo below.
I tried to sculpt it but the results doesn’t satisfy me.
What modeling technique would be the best for this?


Low-poly would be doable, if it is not more complex than in the image and if you don’t mind the effort of creating a suitable topology. Looks to me it can be quite low-poly, when working with crease.

An alternative would be to create a height map of the patterns in an image/vector editor and use it as a texture. Maybe bump-mapping is sufficient. If not, there is true displacement, but as always, the latter will require a very fine subdivision to look good.
