UI have a building textured with a procedural texture and I want to add grunge. I though tI could just use a seperate uv map but when I unwrap it, its moves the uv’s for all. Is it possible with have two different unwraps?

I wonder how this is even possible.
If you have multiple UV maps set up, blender should only show and update the one you selected in the Object Data Properties tab. I think from blender 2.8 to the current 2.9 version you can also select them in the top rigth in the UV Editor.
If you are actually in UV Map with multiple UV islands in it, it should be possible to unwarp with only the faces selected you want to change.

You can add UV maps using the ‘+’ button in the Object Data Properties tab (usually on the right in the Blender interface - the tab with the triangle symbol that has each corner look like a vertex).
In the material editor, youc an create the node (Shift+A) ‘add >> input >> UV Map’.
