I goofed and added a mesh while I had one selected and they became one. Two questions.
1- Is there anyway to undo this or do I have to start over.
2- Is there a way to make any new creation a seperate mesh?

Select the vertices which you want to make a new object and press P

Be in object mode when you add the mesh

Also don’t have anything selected while in object mode.

I was going to say what Richard already said. But the reason I went ahead and am leaving a comment was in response to your reply. As long as you are in Object mode, it shouldn’t matter what you have selected before you add a new object. You could have every object in your scene selected, and if you add a new object, then it should be it’s on object and not connected with any other.
One thing to keep in mind with the Separate by Selection trick is that if you have any modifiers in your modifier stack of the “original” object, or if you have any materials or parenting associated with it (pretty much most kinds of object data), they will be “inherited” by the newly created object. Sometimes, this is exactly what you want it to do, but not always, so if you separate something and you’re still getting some funny results with it, that’s the first things to check. Also, the origin of the new object will be the origin of the original object, which is likely not what you intend.
