I really should know how to do this but…
I have textured and UV’d the floor of my extruded from plane maze which works fine. But I cannot seem to unpack the vertical walls & texture them with a stone tex. The tops map ok but not the vertical.

it may already include some included!
did you set the box mapping to get 3D effect ?

UV mapping alone is not enough, you need to UV unwrap your walls.
Imagine you got a shoebox in front of you, with the bottom up.
If you try to flatten it, to paint it, you’d just squash it, you can’t flatten it.
If you cut open all 4 vertical edges you, you can flatten it our just nicely and paint it.
You got to do the same for your labyrinth.
In editmode>edgemode select the edges you want to cut open, then mark them as seams.
If you unwrap those once you set the seams, it’ll map flat just like you intended.
You should also avoid stuff like rightish of the center, where those tetris-L block meets the tetris-I block.
You got 4 triangles there sharing the same 2 vertices.
