How would I use a mesh/curve/etc. to manipulate a mesh, like curving a severly subdivided plane, making it… curved, like taking a piece of sheet metal and bending/shaping it…

Give this a go: Go into edit mode, select all vertices and press shift-W to warp. The 3d cursor is the pivot point. You’ll know what I’m talking about when you try it…
