How would I go about parenting separate objects to separate bones within an armature? Eg, for trying to to make a metaball person.

If you use “Custom” and choose your metaball, it should create one metaball for every “deforming” and selected bone in the armature.
You can then make metaballs single user if you don’t want linked duplicates.
