Hello
Is it possible to assign a shape (sphere) to Particles ?
Is it possible to have individual Particles affected by Gravity ?
Is it possible to have Particles react to surfaces they collide with ? For example, particles bouncing up after coming in contact with a Plane.

Yes, parent a sphere to the particle emitter and press DupliVert button in the Anim buttons
It depends, if setting a negative Z force in the particle properties is enought, then yes.
No, not with these particles, for that you need the realtime engine and its collision detections, but you must forget of particles then…

the blender particles force are constant speed forces, not accelerations forces.
