This is unfortunately a limitation of menus in Blender, a click will close them. The only option is to make a Add Camera modal that would accept shortcut inputs until you validate them, like hard ops operators for example. But that would only be when adding cameras…I wish it was possible to create floating menus but I don’t think it’s possible at the moment.
I will definitely keep that request in the back of my mind as it would make the pie menu a lot more useful.
