Putting the Random in Random Textures

I have a simple model (of a potato no less!) that gets its character from a displacement map: an untweaked stucci texture. I want to create an unlimited set of potatoes.

If the stucci texture is generated from random noise (I assume it must be) I should be able to change the seed of the random number generator and generate unlimited variations.

But I can’t see any facility to do this.

How do you get different procedural textures with the same parameters?

Please help my potatoes gain some individuality!
