So 2.8 has 5 different templates you can create from the splash screen or the file menu.
The one I use a lot is the sculpting startup file, but I find the layout, settings and matcap not how I like it, so instead on changing the settings everytime I found out that opening a template (e.g sculpting), customizing it and then saving the startup file, will save it as the template you opened.
