Procedural, stylized planet made with shader nodes on the default plane. No post-processing/compositor, rendered in Eevee. Pixelation is done by stepping the input coordinates using the vector snap node(set to 1/100 on both x & y fields)

I was thinking, with gradients, and careful masking, even like a landscape is possible like this, say, animate day/night cycles :blush:
