There is only one material applied to the meat, I can post a screenshot if you want. It’s basically composed of two layers : the first one is the sss node mixed with a glossy one, and the second is another glossy. I mixed them with a normal node multiplied to the pointiness value and a noise texture.

Thank you a lot, I made the textures myself in the texture paint mode. The new version of blender has a cavity mask feature, which makes the texturing a lot easier !

Did you add some SSS?

Yes, there is no diffuse shader in the material, but the scale value of the sss node is determined by the pointiness in order to keep the details noticeable.
