I know you can add > text, extrude it, bevel it, and all kinds of other things, but once all that is done, and i have the text looking the way i want it, can i then edit it as a mesh just like a cube or uv sphere? Hitting tab just lets you re-write the text so im not sure what else to do.
alt C >> convert text to curve >> alt C again >> convert curve to mesh.
You can convert a text object to a mesh with Alt+C. You should check the resolution parameters in the text settings as these will determine the density of the mesh.
