I can assign multiple Materials within one text object with the Material Index. Like every letter another color. But as soon as I use Extrude, blender will use Material Index 1 for the front side and the assigned index only for the extruded side parts. Is that by design? How can I assign a Material Index to the fronts of a letter?
BTW: I don´t want to convert!

It seems to me that this is not necessary for most applications any more. Most people do it because they always did, but the new text object seems very powerful to me. Converting gives lots of vertices and I cannot change the text any more, which is important in my application.
Anyway, according to the blender documentation it is supposed to work to assign multiple material/texture to a text. I am trying to figure out how this works.

I am not sure, I understand what you mean. Do you mean, applying a texture and not only a color? What would that change?
