I must have inadvertently hit a key combination that turned the dimension panel in the transform properties green. I carried on working but after saving and reopening the file none of the dimensions of that part of my work had been saved but the items where still there. What did I hit and what does that key combination do.

Green usually means the displayed value is an inter-/extrapolated value at the current frame (whereas yellow means the current frame has a key). So you can delete the key to revert it. Go to the next key frame by pressing cursor up/down, then move the mouse over the dimension panel and press Alt+I. Or delete the frame in the dope sheet window (Shift+F12). You’ve probably inserted the key by presing the I key over the dimensions section.
