Is there any tutorials out explaining the use and cons of Tri & Quad?
No tutorials, but when you madel regular, It’s not BAD to ust tris, but when using subsurfs, it can give very annoying results.
So only use it on sub surfs? Got it. Where is the toggle for this?
Select the faces you want to convert and then:
quad -> tri: Ctrl-T
tri -> quad: Alt-J

Subsurf toggle is in the edit buttons (where SMesh used to be).
P.S. If you select two triangles that share a diagonal
and press ctrl-f the diagonal flips. Handy while trying to
get the topology right.
