was on blendercookie and one of the adverts was for a medical anatomy app using accurate 3d models of every single bit of your anatomy.
the page i will take you to is to a demo of their software which focuses on the head only. you can see everything that is in your head its totally amazing to play with, and it got me thinking that something like that may be useful to a artist looking for very accurate build up of a human mesh with muscles etc.
sory richard i didnt actually think of it as other software, more the visual info etc useful in the use creating accurate meshs in blender, you know use it as a visual guide. for accuracy specially with all the difference layers of body parts ie skeleton, cardiovascular etc,
apologies if what i originally said sounds wrong, i know nothing about these things and to actually see them like that can help me with ideas for character modelling.

the demo isnt actually downloadable, its an online thing and the application is more for medical students and the like.
